Our potatoes are supplied by Stewart Robinson Ltd of Limavady who import the best quality potatoes from England.

We also use a variety called Cara from Spain in early summer, then for the rest of the year, we use Maris Piper which are grown in Shropshire and Lincolnshire.

The Maris Piper potato is excellent for chips as they have a low sugar content and are very high in dry matter thus giving a very dry chip. Indeed the Maris Piper is excellent for mashing, roasting and baking as well.


We do... We peel and chip the potatoes daily in our temperature controlled store.

So, you can be sure that your chips are prepared fresh every day.

We don’t use frozen, chipped potatoes that are loaded with preservatives.

We don’t serve skinny fries that are loaded with fats and...

We don’t make trendy restaurant wedgy, fat chips. (These aren’t proper chips!)

Fried to perfection

Our chips are fried twice... Why? Because frying twice gives the chip a crunchy exterior and a fluffy interior that defines the traditional chip.

First they are blanched in beef dripping and then finished off in rapeseed oil.

Rapeseed oil is high in mono-unsaturated fats, is a good source of vitamin E and has a favourable balance of ‘good’ and ‘bad’ fats.

We change our dripping and oil twice a week and the old fats are recycled.

Our chips are blanched for approximately five minutes in beef dripping to ensure that the chip is sealed properly and is ready for being finished in oil.

The blanched chips are then fried in rapeseed oil to give a beautiful fry flavour. Our chips are dry and flavoury on the inside and golden and crispy on the outside.

With careful preparation and attention to detail we serve you the perfect chip.

We’ve won 13 Bridgestone/McKenna awards in a row from 2003 proving that we know a thing-or-two about making the traditional chip.

Your fresh Atlantic cod or haddock is landed at Greencastle, County Donegal and processed by Donegal Prime Fish in Derry, holders of The Seafood Quality and The Great Taste Award. Each piece of fish is boned and portioned in our kitchen and cooked to order using our own recipe batter.
